I took a sweeter approach to this week’s challenge and found a recipe for no-bake cookies. These peanut butter pretzel balls are made with oat flour. Oat flour is not something I have in my pantry, so I used my roommate’s bullet smoothie blender to grind up my steel cut oats. Sweetened with honey and creamy peanut butter these treats include crushed pretzels and a teaspoon of vanilla. The chocolate glaze was supposed to be melted dark chocolate. For lack of chocolate, I whipped up some powdered sugar, whole milk, and Nutella. The time in the Kitchen was a welcome change of scene from my home office computer and the treats were delicious!
