When I was younger, sometimes my mom would make cold tahini / peanut butter noodles for breakfast. Yes! for breakfast. I love noodles, and I decided for this challenge, I would bring back a childhood memory of peanut butter noodles.

Vegetarian
I don’t normally keep peanut butter nor pretzels in the house. So I substituted Ritz crackers for the pretzels as a crunchy garnish. I do, however, had a huge bag of raw peanuts that I had bought months ago when I made a delicious Indian eggplant peanut dish. I had to make my own peanut butter, which actually proved to be quite easy – I may just stop buying store bought peanut butter altogether.


My peanut butter didn’t quite get to the creamy stage, but by the time I combined it with the soy sauce, minced garlic and sesame oil, it all turned into a creamy delight. The honey-roasted peanuts were seasoned with brown sugar, garlic powder, chili pepper, cayenne pepper, and cinnamon… Mmmmm.
